Banana Cupcakes

1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
1 cup mashed bananas
1/4 cup buttermilk
2 cups flour
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
- Cream shortening and sugar. Add eggs, vanilla, bananas and buttermilk.
- Combine flour, baking powder, baking soda and salt. Add to banana mixture.
- Spoon into cupcake wrappers.
- Bake at 350F for 15-20 minutes, until a toothpick comes out clean.
- Remove to wire rack to cool completely before frosting.
